Can I only use several components from the react product?

The KendoReact components support tree-shaking: 
https://www.telerik.com/kendo-react-ui/components/introduction/#toc-tree-shaking-and-server-side-rendering 

This means that only the relevant packages will be included in your project. Although you may be using only the Grid component, for example, all the components that are part of its dependencies will also be included, like the dateinputs package.
